French Onion Shepherd’s Pie with Lentils & Creamy Cauliflower Potato Mash

This is about 2 hours of cooking when all is said and done, but that’s what holidays are all about, right? A little extra effort with your healthy holiday recipes is worth it for all of your favorite people 🙂

Veggie Chili with Sweet Potato

Recipe: Drizzle and Dip. Serves: 4 – 6. Total cooking time: 2.5 hours (slow cooker) 15 mins (pressure cooker).

This vegetarian chili is so delicious you won’t even notice there is no meat.

Made with a mix of beans, tomatoes, vegetables, and spices, this healthy holiday recipe is super healthy and affordable I’m slotting this into a regular meal rotation. Zucchini Linguini with Spinach & Basil Pesto

Recipe: Healthy Chef Serves: 4   Total time: 30 minutes

“This recipe is from my book Purely Delicious and what I love about this dish is that you can enjoy zucchini linguini raw or lightly heated through. The pesto slightly softens the zucchini as the aromatics penetrate right through and you end up with a glorious plate of deliciousness that is irresistible. I love to serve mine simply with a grating of Parmesan and roasted pine nuts. Greens such as fresh parsley and basil are full of super food goodness that is anti-inflammatory to the body. Garlic and black pepper are anti-inflammatory and can stimulate digestion.”


Peanut Slaw with Soba Noodles

It’s a colorful slaw with tender soba noodles, tossed in sesame-ginger peanut sauce. Need I say more?

Recipe: Cookie and Kate. Serves: 4 – 8. Total time: 25 minutes.

Easy Chili Lime Fish Tacos

For a nice quick little sauce, reserve 1-2 tablespoons of the chili lime sauce and mix with mayo or sour cream. Drizzle this sauce over the top of your tacos.

Recipe: Pinch of Yum Serves: 2–3. Total cooking time: 30 mins
